watermellon_fetaCombining sweet and savory in a meal may appear to be an unlikely combination for some, however it is a common culinary technique used by chefs. Think of a hamburger and soda, or a sweet barbeque sauce with a savory side of ribs. By using this approach with a sweet fruit and a salty cheese, it can be a winning appetizer for a summertime meal. – Karen Russin, MSc, RD, CDN

Watermelon and Feta

Serves 4

10 oz feta

4 ½ cups large chunks of watermelon

¾ cups basil leaves

½ small red onion, very thinly sliced

Pepper to taste

Olive oil

Slice the feta into large but thin pieces, or just break it by hand into rough chunks.

Arrange all the ingredients, except the olive oil on a platter. Drizzle over some olive oil, garnish with pepper, and serve.
